Creamy bananen-vijgen-oatmeal

Niets lekkerder dan ’s ochtends een heerlijk potje havermout voor je neus. Dat vind ik toch. Er was een tijd dat m’n ochtenden bestonden uit havermout en melk. That’s it. Gelukkig al lang verleden tijd. Ondertussen heb ik er al alles ingekieperd wat ik in m’n koelkast tegenkom. Van spinazie -beetje vreemd, oké- tot pompoen. We had it all.  Creamy vijgen en bananen in een herfstsmoothie. Kan je het je voorstellen? Een vleugje kaneel is trouwens onontbeerlijk!

Het vijgenseizoen is bijna ten einde en net op dat moment heb ik een voorliefde voor deze héérlijke stukjes fruit ontwikkeld. En, even in de kantlijn… vijgen zijn ook gewoon héél erg gezond. Ze behoren tot een van de meest gezonde voedingssoorten ter wereld. Ze bevatten tonnen vezels, vitamines en mineralen. Alles wat zo’n mensenlichaam nodig heeft om springlevend te zijn. Mooi meegenomen is dat ze heerlijk zoet zijn en dus ideaal om mee te bakken, koken, smoothies van te blenden of gewoon op te peuzelen als tussendoortje!

Ingrediënten:

  • 1 1/2 kop havermelk
  • 3 – 4 verse vijgen
  • 1 1/2 bevroren banaan
  • 1/3 kop havermout
  • 1 el lijnzaad
  • 2 tl kaneel

Topping:

  • extra vijgen
  • een ienie-mienie beetje muesli, granola of rawnola
  • een kaneelstokje

How to:

  • Blend alle ingrediënten samen voor de smoothie.
  • Versier met je topping naar keuze.
  • Smakelijk!

I notice since changing the way I eat, my tastebuds have change dramatically. I use to drink a medium iced coffee from Dunkin’ Donuts, with 3 sweet n’ low and cream. Imagine. Just imagine. And I would have that like 4 times a day! When I switched to unsweetened almond milk needless to say, it was an adjustment. A big one. I would use a stevia to try and mimic the sweetness but after I while I stopped using that too. I enjoy my coffee with unsweetened almond milk all the time now. Sometimes I do a dash of vanilla but even then I’ll notice the difference. I sometimes wish my tastebuds would do that with cake or chocolate. Ok, maybe that was going to far, cake and chocolate in the same sentence is just heavenly on it’s own. Almost worth the “baby fat”. 😉

Since I’m on a fig kick you may see more recipes in the very near future with more figs. Get em’ while they’re hot people! This smoothie is really simple. It tastes like sweet fall in a glass. Banana, Figs, Cinnamon, Rolled Oats, Almond milk, ice and boom you’re done. Throw some ridiculously awesome toppings on there and go have a dance party USA.

And if by chance you add a little rum to it, hey, YOLO! (It’s 12 o’clock somewhere.)

Creamy Fig and Cinnamon Fall Smoothie

yield: 1-2

prep time: 5 MINUTES

total time: 5 MINUTES

It’s Creamy. It’s Bananas, It’s Figgy. It’s Sweet. It’s Smooth. It’s Fall. Omega-3 Rich.

Ingredients:

  • 1 1/2 cup almond milk
  • 3-4 fresh figs
  • 1 1/2 frozen banana
  • 1/3 cup rolled oats
  • 1 tbsp flax seeds or meal
  • 1-2 tsp cinnamon

Toppings

    • handful of mulberries
    • extra figs
    • sprinkle of rolled oats or muesli
    • sprinkle of chia seeds
    • granola or rawnola
    • 1/4 cup coconut yogurt (optional)
    • 1 cinnamon stick for stirring
Order Ingredients

Directions:

  1. Blend all ingredients together until smooth and creamy. Adjust almond milk and ice to desired consistency.
  2. Top with a variety of toppings as suggested or do your own thing and throw cacao nibs on there, some peanut butter drizzle, whatever you fancy.
  3. Serve and Enjoy!
-If you have leftover smoothie that you can’t finish make a chia pudding! -sub almond milk for any nut milk
